Perry’s – By Claud Beltran
PASADENA, Calif. – dusitD2 Hotel Constance announced the debut of their new restaurant Perry’s, by Claud Beltran. Born and raised in Pasadena, Beltran is a celebrated Southland chef with notable Pasadena restaurants “The Eatery” and “Bacchus Kitchen”. Beltran will feature a Cal-Asian inspired menu – with a twist.
“While Cal-Asian cuisine is the focus of the cuisine at Perry’s, I like to mix it up a bit with influences from Thailand, Vietnam, China – Asia in general, yet prepared with California sensibility and complimented with French techniques,” Beltran said.
Perry’s was named in honor of Constance Perry, the Pasadena socialite and developer of Hotel Constance in 1926. The menu is designed by Beltran and includes items such as Pan seared Scallops with buckwheat soba noodles, snow peas and ginger-carrot vinaigrette. Suggested wine pairings will highlight a deep and varied selection of primarily California wines.
“I developed the wine list with variety and unique regional offerings in mind. I didn’t want to cultivate an extensive list of wine from around the globe when we have so many premier wineries throughout California” Beltran explained. “Our guests will enjoy a curated list of wines that you can’t find in many local restaurants. It’s a wine list – with a twist” he explained with a grin.
General Manager Phil Anderson said the partnership with Beltran was the next step in showcasing Hotel Constance as a contemporary and sophisticated destination both locally, regionally and internationally. “Uniting with Claud allows the perfect blend of sophisticated but fun cuisine which couples well with our reputation for superior service and a contemporary boutique hotel experience” Anderson said. “Claud’s knowledge of locally sourced ingredients, combined with his unsurpassed skill as a top chef, equals a fantastic culinary experience for our guests and Pasadena residents.”
Chef Claud said he knew early on he wanted to work in a kitchen. After being mentored by Master Chef Thomas Keller at Checkers Restaurant in Downtown Los Angeles, Beltran set out on his own. In the quarter century since, Claud Beltran has established himself as one of Los Angeles’ preeminent chefs. Of both Latino and Middle Eastern heritage, Chef Beltran was exposed to various ethnic foods at an early age. He is a foodie who regularly traverses the burgeoning LA restaurant scene.
The décor of Perry’s is contemporary and stylishly sophisticated but offers a relaxed dining experience. The room seats 60 people in a combination of booths, tables, and the very popular communal table. Most of the room over-looks the stunning Spanish-inspired patio courtyard and fountain where you can dine under the stars.
